Castle cake: Important lesson Learnt


I am thankful to see her smile.
Ever since i started baking, i had been planning to make a very beautiful cake. But every year
i failed, and she was disappointed. This year, i was so excited with many ideas, i decided to make a castle cake for her, since she is the little princess in the family. But...
She requested for her fav flavour, chocolate banana cake. I agreed and made it accordingly,using WHIPPED CREAM. I remembered that whipped cream cannot touch fondant, as it will melt the fondant. I thought i was smart enough to coat the cake with ganache so the fondant isnt touching the whipped cream. As i finished decorating the cake after about 4 hours.. i started to realised the cake looks weirder each time. The fondant was looking more like marshmallow? Crumpled kind? Then. It suddenly hit me that the whipped cream needs to be refrigerated, while the fondant cannot. At that  moment, i felt like shooting myself. The whipped cream was getting softer each minute. The worst mistake i made, was to put the whole cake into the fridge. I thought that after taking out from the fridge, i can put it into the aircon room and blow for many
hours and the fondant will harden. But... IT DID NOT!!! When the cake was brought to the place for my mei mei to cut, the whole cake just...

Imagine the disappointment? I was so regretful, and blaming myself. I quickly did another cake, for her to cut it the next day, which was her actual birthday. But.. it was a simple celebration at home. I am sure she will be beaming with happiness if the cake wasnt destroyed, as everyone tells her how pretty her cake it. Is okay, she was still happy with the second cake i made her.
I most probably just ruined my own reputation as a baker, but this is an important lesson for me. Which i will not do again. Please appreciate the photos below.

Lego Cake


My lego cake!!! The quality of my photos are kinda bad, iphone camera kinda suck! My friend from school ordered this cake for one of her friend's 21st. Was so excited about this cake, i kept planning and thinking about it during school time. Haha. I really sat down and dedicated my time to this cake. I hoped i can make someone 21st special! (*I am 21st this year too!! ) Everything is edible, all mould out using fondant! I used Chocolate Mud cake, which i really loved eating! Especially if you heat up and topped it with icecream or whipped cream.  Rich dense chocolate cake.. Yummy! Orders orders? ^^
Valentine's day is coming, i am thinking of selling cookies. Shall do up the designs soon!decided not to, due to the lack of time!

Tiffany and Co Box


In addition to my animal cupcakes, i spent my that weekend doing a tiffany and co cake and a Lego theme cake! Been wanting to do some luxury brand cake, especially excited to do bag cakes. Will attempt it when i have time. Did this cake for one of my cousin's birthday. She together with another two cousins bought me a ticket to SS3 which i am so thankful about. Couldn't think about what present to get for her, so i felt that using a cake can express my feelings! I only managed to take one picture of it, and kitty packed the cake. Ohhh, and i didnt get to cut the cake with her too.. But i know she liked it! :D
Everything was made of fondant, and i used pearl dust to dust onto the bracelet to make it look like pearl bracelet! Very happy that i managed to get the colour similar to the Tiff's colour. And so proud that my ribbon actually looked like a ribbon. Hee hee. Happy happy! My sister loves this cake! Anyone interested in ordering?

Animal Cupcakes

My dear friend wanted a 3d standing giraffe cake. OMG, i dont think i have that skill. But because of her request, i have been thinking about sculptured cakes. During holidays, i will try to do more research about it. Maybe one day i will really be able to do a standing 3d cake. I just did within my limits, and decorated some cupcakes for her. I brought it to a party at her house, and hopefully everyone enjoyed it. :) The cupcakes were cookies and cream flavor, i didnt put on any frosting. The faces of the cupcakes were made from fondant.

Matcha Japanese cheesecake



Heat cream cheese, milk and butter together. Add flour, green tea powder and corn starch after the mixture turn warm. 
Followed by egg yolks. Stir it in.
In another bowl, beat the egg whites till frothy.
Add Cream of tartar.
Add sugar and continue to beat till soft peak form but can hold shape. 
Fold 1/4 into the green tea mixture, and another 1/4. Fold the green tea mixture into the remaining 1/2 of the egg whites mixture.
Pour into prepared pan. See that it is wrapped with aluminium foil? I wrapped the circle so that water will not get in contact with the mixture. I wrapped the square base because that pan tend to leak.
Pour the boiled water onto pan, to create water bath.
Put in the oven and wait for 45 mins!
Nicely baked.
Somehow water managed to go in? Idk why, use tissue to dap it! Hahahhaha.
