Matcha Japanese cheesecake



Heat cream cheese, milk and butter together. Add flour, green tea powder and corn starch after the mixture turn warm. 
Followed by egg yolks. Stir it in.
In another bowl, beat the egg whites till frothy.
Add Cream of tartar.
Add sugar and continue to beat till soft peak form but can hold shape. 
Fold 1/4 into the green tea mixture, and another 1/4. Fold the green tea mixture into the remaining 1/2 of the egg whites mixture.
Pour into prepared pan. See that it is wrapped with aluminium foil? I wrapped the circle so that water will not get in contact with the mixture. I wrapped the square base because that pan tend to leak.
Pour the boiled water onto pan, to create water bath.
Put in the oven and wait for 45 mins!
Nicely baked.
Somehow water managed to go in? Idk why, use tissue to dap it! Hahahhaha.

S'more brownies


Give me s'more s'more brownies!
I attempted s'more brownies just now, it is in the process of cooling now. 
Recipe adapted from Half Baked
Ingredients:
1x 12-ounce box vanilla-wafer cookies ( I used sponge fingers)
2-1/4 cups sugar, divided
3/4 teaspoon kosher salt, divided
1 cup plus 5 tablespoons unsalted butter, melted, divided
5x 1-ounce squares unsweetened chocolate, melted
1 teaspoon vanilla extract
5x large eggs, at room temperature
1 cup all-purpose flour
1x 200g bag large marshmallows,  cut in half
1) Preheat oven to 350°. Line a 13x9-inch pan with aluminum foil, letting foil hang over sides of pan. (I used 9x9)
2) Set aside. In the work bowl of a food processor, pulse together cookies, 1/4 cup sugar, and 1/4 teaspoon salt until mixture is fine. With processor running, slowly add 5 tablespoons melted butter, and continue blending until mixture is well combined. Press crumb mixture firmly into the bottom of prepared pan.
3) In a large bowl, whisk together remaining 1 cup melted butter and melted chocolate until mixture is well combined.
4) Whisk in remaining 2 cups sugar and vanilla. Add eggs one at a time, whisking constantly, until mixture is smooth and glossy.
5) Whisk in flour and remaining 1/2 teaspoon salt. Pour batter into pan, smoothing top.
6) Bake until a wooden pick inserted in the center comes out with just crumbs, about 30 minutes. Let cool slightly.
7) Preheat oven to broil. Place marshmallow halves on top of brownies, in rows, as close as possible.
8) Broil until tops of marshmallows are golden brown and puffed.you may have to rotate the pan a couple of times to get even browning.
9) Let cool slightly before cutting brownies into squares. Use a sharp knife to cut brownies. Dipping the knife in a glass of warm water between cuts helps it not to stick to the marshmallows.
** Because i used a 9x9 pan, baking was very long. It took a while before the center gets cook. Adjust the timing well. So sorry for bad quality pictures, i used my phone to take them.
Now, i am waiting for it to cool before trying it! Hopefully the baking time didnt ruin my brownies!! * cross fingers.
